Lumberjack Food Company 
Original Oatmeal Raisin Cookies

  • 2 Cups Lumberjack Food Co Dry Pancake & Waffle Mix

  • 1 Large Egg

  • 1/2 Cup Brown Sugar

  • 1/2 Cup Raisins

  • 8 Tbsp (1 Stick) Cold Butter

  • 1 tsp Vanilla

  • 1 tsp Cinnamon

Mix all ingredients well, refrigerate for 20 minutes before baking.

Bake at 350° F  for 15 minutes

Makes approx. 1 1/2 Dozen

Original Blueberry Muffins

  • 2 1/2 Cups Lumberjack Food Co Dry Pancake & Waffle Mix

  • 1/2 Cup Sugar

  • 1 Large Egg

  • 2/3 Cup Water

  • 1/4 Cup Vegetable Oil

  • 1 1/2 Cups Fresh or Frozen Blueberries

Preheat Oven to 400° F

In a medium bowl mix egg, water, and oil.

Add pancake mix and sugar, stir just until moistened.

Fold in blueberries.

Fill paper-lined muffin cups 2/3 of the wall full.

Bake 20 - 25 minutes or until a toothpick inserted in the center comes out clean. Cool 5 minutes before removing from pan to a wire rack.

Makes approx. 1 Dozen

Original Chocolate Chip / M&M Cookies

  • 3 Cups Lumberjack Food Co Dry Pancake & Waffle Mix

  • 1 Large Egg

  • 1 Cup Light Brown Sugar

  • 1/4 Cup Butter Crisco

  • 1/4 Cup Softened Butter

  • 3 Tablespoons Milk

  • 1 Tablespoon Vanilla

  • 1 Cup Semi-Sweet   Chocolate Chips OR 11oz bag Mini M & M's

Preheat Oven to 350° F

In a medium bowl mix brown sugar, shortening, butter, milk, egg, and vanilla.

Add pancake mix and chocolate chips/M&M's, mix well.

Lightly grease cookie sheet with a stick of butter.

Bake 10-15 minutes or until edges are lightly browned.

Let cool for at least 2 minutes on pan before removing to a wired rack.

Makes approx. 2 1/2 Dozen

* For sweeter, chewier cookies use dark brown sugar

Original Pumpkin Muffins

  • 2 Cups Lumberjack Food Co Dry Pancake & Waffle Mix

  • 1 Large Egg

  • 1/2 Cup Light Brown Sugar

  • 8 Tbsp (1 stick) Butter

  • 1 Tbsp Pumpkin Pie Spice

  • 1/2 of a 15oz Can of Pumpkin

Mix all ingredients well & scoop into a greased muffin pan.

Bake a 350°F for 25-30mins

Makes 10 Muffins

Original Apple Caramel Squares

  • 3 Cups Lumberjack Food Co Dry Pancake & Waffle Mix

  • 1 Large Egg

  • 1 Cup Light Brown Sugar

  • 1/4 Cup Softened Crisco

  • 1/4 Cup Softened Butter

  • 3 Tablespoons Milk

  • 1 Tablespoon Vanilla

  • 1 Cup Baking Apples - peeled and diced small

  • Caramel Drizzle for Topping

Preheat Oven to 350° F

In a medium bowl mix brown sugar, crisco, butter, milk, egg, and vanilla

Add in pancake mix and apples, mix well.

Spoon mixture into a lightly greased individually divided brownie pan

Fill each square just shy of the top

Bake 18-22 minutes or until tops are mostly golden brown

Let cool for at least 2 minutes on pan before removing

Drizzle the squares with caramel

Makes approx. 10-12 squares

* Can be served warm with vanilla ice cream
